Biography

The Taste of Umami

Kikunae Ikeda was a professor at Tokyo Imperial University whose legacy is found in kitchens across the globe. Driven by a simple curiosity regarding the deliciousness of his wife's soup, Ikeda isolated the glutamate compound responsible for the savory flavor he identified as umami. He recognized that this flavor profile was distinct from the four traditionally accepted tastes of sweet, sour, salty, and bitter.

  • He developed a process to extract and mass-produce monosodium glutamate.
  • This work led to the founding of the global Ajinomoto company.
  • His research effectively changed the landscape of modern food chemistry.

While MSG later became a source of culinary controversy, Ikeda's original intent was purely scientific. By isolating the chemical essence of kombu seaweed broth, he fundamentally expanded the human understanding of taste. It remains a strange testament to the power of a single observation that an entire industry of food additives was born from one man's attempt to replicate a home-cooked meal.
